Dump (unceremoniously and in any order) into a large bowl the following ingredients: </strong><strong>3 8-ounce pkgs of cream cheese 3 eggs 1 1/8 cup sugar 1 1/2 tsp vanilla extract 1 1/2 tsp almond extract Blend and then beat with an electric mixer at medium speed for 10 minutes scraping sides and bottom of bowl frequently. Pour into deep dish graham cracker crust and bake for 40 to 50 min at 325 degrees. Remove cake from oven and let cool for at least an hour. Variations: Add a frosting or fruit glaze on top. Frosting: Whip one pint sour cream, 2 tablespoons sugar and 1 tsp vanilla at medium speed for 5 min. Spread on cooled cake and bake again for 7 min at 450 degrees. Chill overnight or freeze.
