A recipe that my Mother shared with me years ago that is easy and delicious is her Dijon chicken. There are just a few ingredients but it tastes like something out of a gourmet restaurant. All you need to do is bake the chicken and add a few sides to have a delicious home cooked meal with your family or friends.
Ingredients You Need
• Chicken Breasts (1 per person)
• Dijon Mustard (1 Tablespoon Per Chicken Breast)
• Butter (1Teaspoon Per Chicken Breast)
• Panko Fakes Bread Crumbs
Supplies You Need
• Wax Paper
• Kitchen Hammer
• Small Sauce Pan
• Measuring Spoons
• Cutting Board
• Large Baking Dish
• Whisk
• Small Bowl
Preparing the Chicken
• Preheat your oven to 350 degrees
• Remove the chicken breasts from their package, cut off any remaining fat and rinse thoroughly.
• Take out your cutting board and place a large piece of wax paper across it. Then place the chicken breasts on the cutting board and place another piece of wax paper on top of them.
• Using your kitchen hammer beat the chicken really hard to make it very tender. Then flip the chicken over and beat the other side.
• Then put the butter in your small sauce pan and turn the burner on low heat. Using the 1 teaspoon per chicken breast rule make sure you put the right amount of butter in the sauce pan.
• Once the butter is fully melted place the appropriate amount of Dijon mustard in the pan and mix thoroughly with the whisk. Make sure you put one tablespoon of Dijon mustard per chicken breast in the pan. Once the butter and Dijon are heated thoroughly remove from the heat.
• Place about an inch of Pako Flakes in the bottom of your small bowl in order to make it easy to coat the chicken breasts.
• Take your tenderized chicken breasts one at a time and dip them in the butter and Dijon mixture in the sauce pan and roll them in the Pako flakes. Make sure the chicken is fully coated in the Pako flakes and then place in the large baking dish. Do this for all of the chicken breasts.
• Place the baking dish with the chicken in the oven and set the timer for 15 minutes. Flip the chicken when the timer goes off and bake another 10 minutes.
• At this time check the chicken by cutting into the middle of the thickest piece to ensure it is cooked. If it is not then check every 5 minutes until cooked throughout and chicken is no longer pink.
• Once the chicken is fully cooked place your oven on high broil and place the chicken back in the oven for 2 to 5 minutes. Make sure the Pako flakes are a nice golden brown.
• Remove the chicken from the oven and set aside for a few minutes to cool.
This Dijon chicken is a delicious and easy meal that goes well with a side of rice or potatoes and some vegetables. You can make it for very little money and it tastes great. The Pako flakes are a great crunchy flake compared to traditional bread crumbs so the texture is really nice. I hope you enjoy this chicken dish as much as we do in our family.
